Chef Stephen Bucalo graduated from the Western Culinary Institute in Portland, Oregon in 2002. Since then, he has devoted his professional career to working in kitchens all over the country, including working alongside some of the most influential chefs in the United States. Stephen also has extensive experience in restaurant consulting, which ultimately led him to becoming a managing partner in a successful restaurant group, which created 4 different food and beverage concepts and opened nine restaurant spaces in two states.There is no doubt that Chef Bucalo’s extensive and varied culinary experiences during his career, have shaped his culinary expertise, style, and his philosophy on food.
Although each restaurant experience was different, one commonality always prevailed: an immense love and respect for food. Beginning his chef career in California, Bucalo witnessed first hand the many food movements and kitchen philosophies such as farm-to-table, and head-to-tail. These principles greatly influenced his ideas of “People not purveyors, farmers not salesmen.”
Being a Georgia native, returning to cook in the south was a homecoming of sorts for Chef Stephen. Bucalo says of his time in Georgia “I will probably compare every steak I eat, to the ones I shared with the King of Krog st, and to my Fort Worth Brothers, thank you for teaching me the art of curing and smoking meat.”
Today Bucalo resides in Destin, Florida and after more than 20 years experience of working in someone else’s kitchen, coupled with being the operating partner in a restaurant group, Chef Bucalo is embarking on his first solo adventure, with the Tailored Table. A creative, chef inspired, unique, catering experience, that allows the customer to collaborate, customize and celebrate! The Tailored Table is made to match your taste!
